2 pounds beef
1 teaspoon salt
1 small onion
2 stalks celery
1 small piece of cabbage
4 whole grain allspice
1 carrot
1/2 cup canned tomatoes
Boil the above slowly for 2 hours or until beef is tender. Strain the broth.
Dumplings:
1/2 pound liver, ground (veal or pork)
1 egg
1/2 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, crushed
1/8 teaspoon allspice
Mix the above ingredients with enough cracker crumbs to form dumplings the size of a walnut. Drop dumplings into boiling broth and cook 5 minutes then add noodles and cook 5 minutes more. Add saffron and chopped parsley.
